Ingredients:
- 24 Oreo cookies, crushed (about 300g)
- ½ cup (113g) unsalted butter, melted
- 16 oz (450g) cream cheese, softened
- 1 cup (120g) powdered sugar
- 1 tsp vanilla extract
- 1 cup (240ml) heavy whipping cream, chilled
- 8 Oreo cookies, roughly chopped (for folding into the cheesecake mixture)
Instructions:
- Line the baking pan with parchment paper (optional) for easier removal.
- In a mixing bowl, combine crushed Oreos and melted butter. Stir until fully combined.
- Press the mixture firmly into the bottom of the prepared pan.
- In a separate mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add powdered sugar and vanilla extract, mixing until incorporated.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until combined.
- Fold in the chopped Oreos.
- Spread the cheesecake filling evenly over the crust in the pan. Smooth the top with a spatula.
- Refrigerate for at least 4 hours or until set.
- Once set, remove from the pan and slice into bars. Serve chilled.
