Ingredients:

  • 24 Oreo cookies, crushed (about 300g)
  • ½ cup (113g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy whipping cream, chilled
  • 8 Oreo cookies, roughly chopped (for folding into the cheesecake mixture)

Instructions:

  1. Line the baking pan with parchment paper (optional) for easier removal.
  2. In a mixing bowl, combine crushed Oreos and melted butter. Stir until fully combined.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. In a separate mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Gradually add powdered sugar and vanilla extract, mixing until incorporated.
  6. In another bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until combined.
  8. Fold in the chopped Oreos.
  9. Spread the cheesecake filling evenly over the crust in the pan. Smooth the top with a spatula.
  10. Refrigerate for at least 4 hours or until set.
  11. Once set, remove from the pan and slice into bars. Serve chilled.
