Ingredients:
- 1.5 cups Sun Maid raisins
- 1 tbsp boiling water
- 1 tsp pure vanilla extract
- 1 cup unsalted butter, softened
- 1 cup dark brown sugar
- 0.5 cup granulated white sugar
- 2 large eggs, room temperature
- 1 tbsp ground Saigon cinnamon
- 1.5 cups all purpose flour
- 1 tsp baking soda
- 0.5 tsp kosher salt
- 3 cups old fashioned rolled oats
Instructions:
- Place 1.5 cups Sun Maid raisins in a small bowl with 1 tbsp boiling water.
- Combine 1 cup softened butter with 1 cup dark brown sugar and 0.5 cup white sugar. Beat for 3 minutes until pale and fluffy.
- Mix in 2 large eggs, 1 tsp vanilla, and the raisin water mixture. Beat until smooth and silky.
- In a separate bowl, stir together 1.5 cups flour, 1 tbsp Saigon cinnamon, 1 tsp baking soda, and 0.5 tsp salt.
- Slowly add the flour mixture to the butter mixture. Mix until just combined.
- Use a spatula to stir in the 3 cups of rolled oats and the soaked raisins.
- Form 2 tablespoon sized balls and place them 2 inches apart on a lined baking sheet.
- Bake at 350°F (175°C) for 10 minutes until the edges are golden and the center looks slightly under baked.
- Let them sit on the pan for 5 minutes before moving to a wire rack.
