Ingredients:
- 8 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1 tbsp ranch seasoning powder
- 1/2 tsp cracked black pepper
- 1 large English cucumber (approx. 14 oz)
- 1 loaf (16 oz) white sandwich bread
- 1/2 tsp kosher salt
Instructions:
- Slice the English cucumber into rounds approximately 1/8 inch thick using a mandoline. Lay slices on a paper towel, sprinkle with kosher salt, and let sit for 5 minutes. Pat the tops firmly with another paper towel to remove excess moisture.
- In a medium bowl, combine the softened cream cheese and mayonnaise. Beat with a rubber spatula until smooth and lump-free.
- Fold in the ranch seasoning powder and black pepper until the mixture is a uniform pale ivory color.
- Spread a generous, even layer of the ranch mixture from edge to edge on the bread slices to create a moisture barrier.
- Layer the dried cucumber slices in an overlapping pattern on the spread. Close the sandwiches and use a serrated knife to remove crusts and cut into fingers or triangles.
