Ingredients:
- 1 lb strawberries, hulled and halved
- 3 cups watermelon, cubed or cut into stars
- 2 cups jicama, sliced or star-cut
- 2 medium bananas, sliced into rounds
- 1/2 cup mini marshmallows
- 2 cups blueberries, fresh
- 1 cup blackberries, fresh
- 2 tbsp fresh lemon juice
- 1/4 cup fresh mint leaves
- 1 tbsp honey
Instructions:
- Wash all berries and pat them dry to prevent flavor dilution.
- Use a star-shaped cookie cutter to carve shapes out of the watermelon and jicama.
- Slice the bananas into 1/2 cm rounds and toss them in a bowl with 1 tbsp of lemon juice. Wait 30 seconds until the juice is absorbed.
- Arrange the blueberries and blackberries in the top-left corner of the platter, packing them tightly to create the union of the flag.
- Create alternating horizontal stripes of watermelon/strawberries and jicama/bananas across the remainder of the tray.
- Mix the remaining 1 tbsp of lemon juice with 1 tbsp of honey in a small bowl.
- Lightly brush the white fruits (bananas, jicama, marshmallows) with the honey mixture until they look glossy.
- Tuck fresh mint leaves into the edges and gaps for garnish.
