Ingredients:
- 4 cups fresh supergreens (kale, spinach, arugula blend)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh orange juice
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions:
- Rinse and dry the supergreens thoroughly; place them in a large mixing bowl.
- Halve the cherry tomatoes and add to the bowl.
- Dice the cucumber and add it to the bowl.
- Thinly slice the red onion and place it into the bowl.
- Carefully dice the avocado and fold it into the salad.
- In a separate bowl or jar, combine olive oil, lemon juice, orange juice, honey, salt, and pepper; whisk well.
- Drizzle the vinaigrette over the salad and gently toss to combine.
- Sprinkle crumbled feta cheese on top (if using) and enjoy immediately!
