Ingredients:

  • 2 pounds (900g) ground beef (80/20 blend recommended)
  • 1 cup (120g) finely chopped yellow onion
  • 1 cup (240ml) milk, whole or 2%
  • 1 cup (80g) plain bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup (50g) finely chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (120ml) ketchup
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon yellow mustard
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, onion, milk, bread crumbs, egg, bell pepper, garlic, thyme, sage, salt, and pepper. Gently mix until just combined. Do not overmix!
  3. Transfer the mixture to a loaf pan and shape it into an even loaf.
  4. In a small bowl, whisk together ketchup, brown sugar, mustard, and vinegar until smooth.
  5. Spread half of the glaze evenly over the meatloaf.
  6. Bake in the preheated oven for 45 minutes.
  7. Remove from oven and spread remaining glaze on top of the meatloaf, then continue to bake an additional 15 minutes.
  8. Check the internal temperature with an instant-read thermometer. It should reach 160°F (71°C).
  9. Remove from the oven and let rest for 10 minutes before slicing and serving. This helps retain moisture.
