Ingredients:
- 2 pounds (900g) ground beef (80/20 blend recommended)
- 1 cup (120g) finely chopped yellow onion
- 1 cup (240ml) milk, whole or 2%
- 1 cup (80g) plain bread crumbs
- 1 large egg, lightly beaten
- 1/2 cup (50g) finely chopped green bell pepper
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup (120ml) ketchup
- 2 tablespoons brown sugar, packed
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine ground beef, onion, milk, bread crumbs, egg, bell pepper, garlic, thyme, sage, salt, and pepper. Gently mix until just combined. Do not overmix!
- Transfer the mixture to a loaf pan and shape it into an even loaf.
- In a small bowl, whisk together ketchup, brown sugar, mustard, and vinegar until smooth.
- Spread half of the glaze evenly over the meatloaf.
- Bake in the preheated oven for 45 minutes.
- Remove from oven and spread remaining glaze on top of the meatloaf, then continue to bake an additional 15 minutes.
- Check the internal temperature with an instant-read thermometer. It should reach 160°F (71°C).
- Remove from the oven and let rest for 10 minutes before slicing and serving. This helps retain moisture.
