Ingredients:
- 4 cups olives (any combination—Kalamata, green, or mixed varieties)
- 3 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- ½ teaspoon Aleppo pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 pinch red pepper flakes (optional for extra heat)
- ¼ teaspoon smoked paprika (or pimentón)
Instructions:
- In a large bowl, add olives, olive oil, lemon juice, Aleppo pepper, oregano, basil, red pepper flakes (if using), and smoked paprika.
- Stir the mixture until all olives are well-coated with oil and spices.
- Transfer olives to an airtight container or jar. Seal and place in the refrigerator. Allow to marinate for at least 24 hours (preferably 48 hours) for maximum flavor.
- Remove olives from the refrigerator about 2 hours before serving to reach room temperature.
