Ingredients:

  • 4 cups olives (any combination—Kalamata, green, or mixed varieties)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Aleppo pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 pinch red pepper flakes (optional for extra heat)
  • ¼ teaspoon smoked paprika (or pimentón)

Instructions:

  1. In a large bowl, add olives, olive oil, lemon juice, Aleppo pepper, oregano, basil, red pepper flakes (if using), and smoked paprika.
  2. Stir the mixture until all olives are well-coated with oil and spices.
  3. Transfer olives to an airtight container or jar. Seal and place in the refrigerator. Allow to marinate for at least 24 hours (preferably 48 hours) for maximum flavor.
  4. Remove olives from the refrigerator about 2 hours before serving to reach room temperature.
