Ingredients:

  • 2 large eggs (100g)
  • 1 tablespoon milk or cream (15 ml) (optional)
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon olive oil (5 ml)
  • 50g chorizo, diced
  • 1/4 small onion, finely chopped (approximately 25g)
  • 25g shredded cheddar cheese
  • 1 large flour tortilla (approx. 10-12 inch diameter)

Instructions:

  1. In a small bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the diced chorizo and onion. Sauté until the chorizo is lightly browned and the onion is softened.
  3. Pour the egg mixture into the skillet with the chorizo and onion. Cook, stirring occasionally with a spatula, until the eggs are set but still slightly moist.
  4. Lay the tortilla flat on a clean surface. Sprinkle the shredded cheese evenly over the tortilla.
  5. Spoon the egg and chorizo mixture onto the tortilla, leaving about an inch of space around the edges.
  6. Fold in the sides of the tortilla, then tightly roll it up from the bottom.
  7. For a crispier exterior, heat a dry skillet over medium heat. Place the wrapped tortilla in the skillet and cook for 1-2 minutes per side, or until golden brown and slightly crisp (optional).
