Ingredients:

  • 4 (6-ounce/170g) Mahi Mahi fillets, skinless
  • 1 tablespoon/15 ml olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup/113g unsalted butter, softened
  • 2 tablespoons/30 ml fresh lemon juice
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 2 tablespoons/30 ml chopped fresh parsley
  • 1 tablespoon/15 ml chopped fresh chives
  • 1 teaspoon/5 ml dried oregano
  • 1/4 teaspoon/1.25 ml red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease the baking dish with cooking spray or olive oil.
  2. In a small bowl, combine the softened butter, lemon juice, minced garlic, parsley, chives, oregano, and red pepper flakes (if using). Mix well.
  3. Pat the Mahi Mahi fillets dry with paper towels. Brush each fillet with olive oil and season generously with salt and pepper.
  4. Arrange the seasoned Mahi Mahi fillets in the prepared baking dish. Spoon or spread the lemon-herb butter evenly over each fillet.
  5. Bake for 12-15 minutes, or until the Mahi Mahi is opaque and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
  6. Remove from oven and serve immediately. Garnish with extra fresh herbs and lemon wedges, if desired.
