Ingredients:
- 4 (6-ounce/170g) Mahi Mahi fillets, skinless
- 1 tablespoon/15 ml olive oil
- Salt and freshly ground black pepper, to taste
- 1/2 cup/113g unsalted butter, softened
- 2 tablespoons/30 ml fresh lemon juice
- 2 cloves garlic, minced (about 1 teaspoon)
- 2 tablespoons/30 ml chopped fresh parsley
- 1 tablespoon/15 ml chopped fresh chives
- 1 teaspoon/5 ml dried oregano
- 1/4 teaspoon/1.25 ml red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease the baking dish with cooking spray or olive oil.
- In a small bowl, combine the softened butter, lemon juice, minced garlic, parsley, chives, oregano, and red pepper flakes (if using). Mix well.
- Pat the Mahi Mahi fillets dry with paper towels. Brush each fillet with olive oil and season generously with salt and pepper.
- Arrange the seasoned Mahi Mahi fillets in the prepared baking dish. Spoon or spread the lemon-herb butter evenly over each fillet.
- Bake for 12-15 minutes, or until the Mahi Mahi is opaque and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
- Remove from oven and serve immediately. Garnish with extra fresh herbs and lemon wedges, if desired.
