Ingredients:
- 2 slices rye bread
- 2 tablespoons unsalted butter, softened
- 4 oz corned beef, thinly sliced
- 1/2 cup sauerkraut, well drained
- 2 slices Swiss cheese
- 2-3 tablespoons Russian dressing
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon sweet pickle relish
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon paprika
- Pinch of garlic powder
- Pinch of salt and pepper
Instructions:
- Prepare the Russian Dressing: In a small bowl, whisk together mayonnaise, ketchup, sweet pickle relish, Worcestershire sauce, paprika, garlic powder (if using), salt, and pepper. Set aside.
- Butter the Bread: Spread softened butter evenly on one side of each slice of rye bread.
- Assemble the Sandwich: On one slice of bread (butter-side down), spread a generous layer of Russian dressing. Top with half the Swiss cheese, then the corned beef, sauerkraut, and the remaining Swiss cheese. Spread Russian dressing on the other bread slice, and place it on top of the sandwich, butter-side up.
- Grill the Sandwich: Heat a large skillet or griddle over medium heat. Place the sandwich in the skillet and press down gently with a spatula.
- Cook the Sandwich: Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Reduce heat if the bread is browning too quickly.
- Serve Immediately: Cut the sandwich in half and serve warm.
