Ingredients:

  • 8 slices of sourdough bread (or your choice of artisanal bread - approx. 400g)
  • 1 cup mixed greens (approx. 50g)
  • 1 medium cucumber, thinly sliced (approx. 200g)
  • 1 large tomato, sliced (approx. 150g)
  • 1/2 cup pickles, sliced (approx. 120g)
  • 1/2 cup mayonnaise (or vegan mayonnaise - approx. 120g)
  • 2 tablespoons Dijon mustard (approx. 30g)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound (450g) smoked turkey breast or your choice of deli meat
  • Optional: 1/2 pound (225g) crispy bacon

Instructions:

  1. In a mixing bowl, combine mayonnaise, Dijon mustard, garlic powder, paprika, salt, and pepper. Mix until well blended.
  2. Slice cucumber, tomato, and pickles. Set aside.
  3. Preheat the grill pan or skillet over medium heat. Toast 4 slices of bread until golden brown on one side.
  4. Spread a generous layer of the prepared spread on the toasted side of each slice of bread. Layer mixed greens, sliced cucumber, lettuce, tomato, and protein (turkey and bacon) onto four slices.
  5. Top with the remaining slices of bread, toasted side inwards.
  6. Carefully place the assembled sandwiches on the grill. Press down gently with a spatula and grill for 3-5 minutes on each side, or until golden brown and crisp.
  7. Remove from grill, slice in half, and serve immediately, drizzled with any additional choice of sauce.
