Ingredients:
- 8 slices of sourdough bread (or your choice of artisanal bread - approx. 400g)
- 1 cup mixed greens (approx. 50g)
- 1 medium cucumber, thinly sliced (approx. 200g)
- 1 large tomato, sliced (approx. 150g)
- 1/2 cup pickles, sliced (approx. 120g)
- 1/2 cup mayonnaise (or vegan mayonnaise - approx. 120g)
- 2 tablespoons Dijon mustard (approx. 30g)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 pound (450g) smoked turkey breast or your choice of deli meat
- Optional: 1/2 pound (225g) crispy bacon
Instructions:
- In a mixing bowl, combine mayonnaise, Dijon mustard, garlic powder, paprika, salt, and pepper. Mix until well blended.
- Slice cucumber, tomato, and pickles. Set aside.
- Preheat the grill pan or skillet over medium heat. Toast 4 slices of bread until golden brown on one side.
- Spread a generous layer of the prepared spread on the toasted side of each slice of bread. Layer mixed greens, sliced cucumber, lettuce, tomato, and protein (turkey and bacon) onto four slices.
- Top with the remaining slices of bread, toasted side inwards.
- Carefully place the assembled sandwiches on the grill. Press down gently with a spatula and grill for 3-5 minutes on each side, or until golden brown and crisp.
- Remove from grill, slice in half, and serve immediately, drizzled with any additional choice of sauce.
